June 17th is “Eat Your Vegetables Day” and sage advice heard time and again. A dear friend of mine shared a wonderful recipe for Quinoa Salad that has become a fan favorite. In Feng Shui and Oriental Medicine, quinoa is considered a Metal Element food. Enjoy some good eats, healthy veggies, and love to your Metal Element organs of lungs and large intestines. Bon Appétit!
Quinoa Salad
1 cup quinoa, cooked per directions
5 oz almond halves and pieces
8 oz dried cranberries, diced
8 oz mandarin oranges, quartered
8 oz petit peas
8 oz hearts of palm, diced
8 oz water chestnuts
4-5 cucumbers, finely chopped
1 bunch green onion, thinly sliced
10-12 grape tomatoes, quartered
6 cloves garlic
salt and ground black pepper to taste
Prepare quinoa per directions and allow to completely cool. Dice veggies & fruit; combine all ingredients. Add salt and pepper to taste. Fini. Add your personal favorites. Beets and avocado are delicious additions but should be added as you serve the dish as they discolor easily.
